About Me


Hi! I’m Amanda, a homeschool mom with a nursing license, who realized that being a nurse just couldn’t fulfill my need to be with my kids and express my passionate, creative side! As I was dabbling with different outlets for my creativity, a Wilton cake decorating class rocked my world. That was it—I was bitten by the baking bug. And now my life—and my family’s—will never be the same; it’ll be sweeter! Pun intended, of course. 

Even though nursing didn’t prove to be my ultimate career, everyone’s entitled to a second chance...and third, fourth, fifth…as many as they need. This is my “take two.” That’s why I’m calling this blog: Take Two Treats.  Well, that, and because, if you like what I bake, you should definitely take two!  

So, please follow my blog to find out more about my adventurers as a baker. I’ll share my recipes and tips, success stories and flops and everything in between, as it relates to being a homeschool mom of three, trying to live her sweetest life and sometimes “half-baked” dreams (yes, that’s another baking pun; if you decide to follow my blog—get used to it).

    I think your story lends itself to a lot of stay-at-home-mothers and professionals who want to put the passion back into what they do on a daily basis. Good for you for following your passion and having the gumption to go for it. Your treats look really wonderful!! I'd love to see some treats like this at my next family function, even at my next catering event!

  3. HI I'm Bethzayra student Wilton cake decoration. I have a question about the homework for this Sunday . The 3 recipe (7 1/2 cups)of icing is 3 different of (7 1/2 cups) each recipes

    1. Hi! you will need to make 3 batches of the class buttercream in the book to equal 7 1/2 cups. This will be 7 1/2 cups of STIFF so divide that into 3 bowls and water down to also make MEDIUM and THIN. Hope that helps!
